Accountability and Job Summary: The Food and Beverage Manager is accountable to the Executive Director. He/she sets the menu, assumes complete responsibility over all food preparation at the Robinson Film Center, and manages restaurant staff.
Duties and Functions: The Food and Beverage Manager will manage the kitchen personnel and wait staff in compliance with Robinson Film Center policies to assure quality product and services and to maximize sales and profitability.
Maintain kitchen and wait staff employee scheduling to regulate staffing and labor cost.
Coordinate and supervise efforts of kitchen and front-of-house.
Interview, hire, train and terminate, as necessary, all restaurant and events personnel, including kitchen, wait staff and events staff, with the mutual agreement of Executive Director.
Manage employee uniform and personal hygiene requirements.
Control inventories utilizing par and demand system to efficiently control food cost.
Control receiving and rotation of goods, with delegation to Assistant Food and Beverage Manager
Maintain health and safety codes including proper sanitation, cleanliness, and orderliness of all food preparation and service areas.
With Director of Operations oversight, monitor and manage bistro equipment to maintain good working order; represent film center for any maintenance service required.
Promote good public relations; address all concerns involving food services and include involvement in community activities.
Operating Procedures: Assist in the establishment, implementation and maintenance of food service operating procedures to ensure a quality, efficient operation.
Ensure completion of necessary control papers, including but not limited to inventories and warranties.
Develop menus for all outlets including special events.
Plan and coordinate supervision of kitchen for special events.
Develop special promotions as required or requested.
Confer with Executive Director, Director of Operations, and Controller to initiate appropriate action regarding labor cost, incoming business, internal concerns, and other unforeseen circumstances.
Monitor industry trends and make recommendations to maintain the competitive status and profitability of the operation.
Assist in the preparation of the annual budget; monitor the performance of bistro/special events against approved budgets; make appropriate recommendations and implement necessary actions to comply.
Conduct and/or attend meetings to maintain favorable working relationships among bistro employees to promote maximum morale, productivity and efficiency.
Prepare reports, as requested, to develop a more informative data base for decision making and critical evaluation of work activities.
Keep Executive Director, and when necessary Director of Operations and Controller, promptly and fully informed of all concerns or matters of significance where prompt action is necessary.
Review job descriptions, as needed, with Executive Director to make mutual adjustments to meet the unforeseen needs of the operation.

Possess organizational skills as well as attention to detail and the ability to handle multiple priorities.
Exhibits excellent verbal and written communication skills.
Demonstrates professionalism, patience, enthusiasm, and willingness to work long hours.
Takes initiative without waiting to be directed.
College degree or culinary training with five-year’s experience preferred.
Three years management experience preferred.
Medium Work - Exerting 75-100 lbs of force occasionally, and/or up to 50 pounds of force frequently to lift, carry, push, pull, or otherwise move objects. Physical demands will frequently involve the movement of food containers or restaurant equipment from one space to another.
